Does anyone know where I can find a comprehensive list of the SE changes?

IIRC audio changes are not covered though.

Alternatively you could check this article on Wikipedia, 'cannot say how reliable it is.

they forgot to point out the missing wink from Luke at the end of Jedi, but I guess any "improvements" made are more important to them than any pieces of film history that got buried underfoot.
