Very nice, but I feel that you should make it just a little bit deeper than what you've made, because the ESB Vader voice (the best Vader sounded in the entire saga, imo) is still very slightly deeper than your edited ANH voice. Just a tiny bit deeper would make it perfect.

I've just watched Return of the Jedi for the first time in months and I have to say: the acting, writing and story in this film are quite subpar to those of ANH and ESB. While updated effects will help, they can only help so much. I know that Ady has said that he won't be touching the story too much, but I feel that a tightening of the story and dialogue would make ROTJ a substantially better movie.

I think making Yoda retain eye contact with Luke in his first scene would make Yoda more realistic rather than a puppet whose eyes look straight ahead at all times. When Yoda says the line "Ooh, great warrior, wars not make one great" it looks like he's staring at the ground rather than looking at Luke. Can/will this be fixed?

 This is pretty much what I'd like, since it would sell the fact that Yoda visibly falls, instead of conveniently being out of frame as it happens.

And elsewhere, Jedis activate their lightsabres to show that they are not defenceless, and to try to warn off an attack; in ANH:R, Adywan made the significant change of having Vader waiting for Obi-Wan with his sabre turned off, and Obi-Wan activating his first. Of course, unless Yoda or Obi-Wan specifically told him of this, Luke wouldn't know it, but Vader is definitely right in calling him unwise.

 Exactly why did Ady make this change?

No! The original Yoda, while not as expressive as the CG one, looks much more tangible and feels a lot more real. The only tweaking that should be done to it is what Adywan is currently doing in ESB:R.

 I've been thinking about this as well. I think the disc art should be something round. The Death Star on the ANH:R disc is perfect, because it complements the round shape of the disc while showing something iconic from ANH.

But I can't think of anything round that is iconic or instantly recognizeable from ESB. The top of Cloud City, maybe? Hoth? Dagobah? None of these really work as well as the Death Star did.
