The 1991 horror film The Runestone, and The Mask (1994) are very similar despite being different genres. Both revolve around an ancient Norse artifact that causes a magical transformation in the person who finds it. And actor Peter Riegert plays a cynical cop in both.
SNL won't ever be the same without him. I always thought it was so cool he appeared in Weird Al's I lost on Jepoardy! video, which recreated the game show in it's original glory.
Don't forget The Abyss, Leviathan, and Deepstar Six, all in 1989.
Also, Platoon and Full Metal Jacket came out about six months apart.

Arguably, defeating Maul was a trial on it's own and put Obi Wan on the fast track to master. They were bending the rules for Anakin to be trained anyway.

It's probably a huge energy drain that makes it impractical to mount on a Rebel ship, the largest of which is still smaller than the Empire's.
It's tasked with providing cover fire to escaping ships and can't be spared to fire at the walkers, (if they're even attacking near it) and once the generator takes a hit, it's probably useless.
I used to do that so my parents could enjoy my LD collection once in a while.
The tricky part was editing out the side breaks before I had a professional VCR. ;)

Also, If Disney is doing this, This is the company who released The Lion King on Blu-Ray with missing VFX and The Little Mermaid with swapped shots in the wrong order and straight cuts when there should have been dissolves. It seems like even if this is really happening, there's lots of room for them to screw something up.
They digitized them, but only as 192kbps wma files, because George didn't think they needed to go any higher. They're old anyway and thus obviously sound like crap by modern standards.

I didn't mind the parodies, except there was some vintage stuff they could have included, (like the Donny and Marie musical skit) and the RC stuff was already available separately, making it a double dip.
It will be pretty easy for them to include Mark Hamill's episode of The Muppet Show next time around. ;)

It could also depend on the level of independence Lucasfilm has from Disney. They do have their own facilities. I don't think the same people supervising the classic animated film transfers would automatically be the ones to do a new OT transfer.

Widescreen VHS was a thing for a while before DVD arrived. (Using the same transfers made for Laserdisc.) Stores like Suncoast had special section for them.
Never saw a letterboxed Lion King VHS here, but there was a UK release.

Were the SE's rushed a bit to make the release date? Restoration aside, there were enough new shots across the OT to be equivalent to doing a entire new movie.
There must have been some pre-production work ongoing for TPM at the same time.
Video covers that give away major plot points are sadly nothing new.
