The standard Channel 4 is FTV not FTA. You can't get it if the Sky card is removed from the STB (i.e. it is encrypted). I expect the HD channel is the same.

You need to remove the hard drive and connect it up to your PC, then use a piece of software to extract the transport streams.
But if it's encrypted then you're stuffed.
I'm waiting for a freesat HD DTR to be released at a decent price, but even then only BBC1 and ITV1 will be in HD.

PowerDVD is a good choice for beginners.
Media Player Classic is an excellent all-round freeware media player, but some of the options could be confusing to beginners.
ffdshow is free, includes a DVD decoder that will work with Windows Media Player.

I'd go for either the Definitive Collection boxed set or the individual 'faces' discs.
There were only ever a handful of anamorphic laserdiscs released, all now collectors items. No Star Wars, I'm afraid. You can find a list of released titles here.
If you mean my DVD transfer of the PAL laserdiscs, there's a specific reason for the muted colours - I had accidentally set some colour levels off centre when I originally did the capture.
"Never The Same Color" is an obsolete adage, originating from the early problems with NTSC analogue/broadcast chroma decoders.
It is certainly irrelevant to DVDs; you might say a DVD can be NTSC or PAL but all that really means is that the framerate and vertical resolution are compatible with those TV standards. The video is of course stored in digital YUV format.
Sorry I can't explain your general observations about PAL colours. Could you give some examples?
I bought the German DVD back before Christmas, and still haven't had a chance to check it out (or compare it to Dark Jedi's downconversion of the HDTV broadcast).
There has since been a UK Region 2 release as well. According to dvdcompare, the English track on the German DVD is dual mono instead of Dolby 2.0 Surround (which the UK release has). I haven't confirmed this yet.

There's an AviSynth filter called ChromaShift which can apply an vertical chroma shift (it can also apply a horizontal shift to U and V separately, if required).
It's a difficult source to deal with. Maybe you could try some deblocking, then add some false grain.
