A little update:
The German version is pretty much finished!
I've already compiled an MKV and gave it a test run on my Samsung TV (as well as an AVCHD on my PS3), but I'd like to test a few other devices before uploading the thing. Since I'd like to keep the filesize below 18 GB and due to the size of the DTS-HD track (and the fact that there's now 4 German tracks altogether), I can't include the international dubs, apart from Hairy Hen's English 5.1 track (and possibly the mono mix). Whoever wants those can mux them in themselves.

This looks phenomenal! I can't believe how clean it looks - so I'd say, that's easily enough practical clean-up on your part.
Do you already have plans how you're going to release this? I'd vote for an full-frame 1080p video (basically at the wrong AR but without the black bars), so that there's enough area to work with. This could be the release for the "tinkerers", which can be used for color-correction and clean-up, and finally resized to the correct aspect ratio. Judging from the softness, the final output could be a nice 720p video.

Because they obviously were based on the real Destroyers used in WWI and II, but instead of the sea they are used among the stars, hence Stardestroyer.

I disagree with your "sadly", because I think Chiang is a great designer. His artwork and style is heavily inspired by Joe Johnston and Doug McQuarrie (he mentioned them as his biggest influences during his career at CEII), and he definitely can design in the classic OT style. After all it was George's idea to go more streamlined with the designs in the prequels, and the designers had to do that. But if you look at the prequels' "Art of Star Wars" books, there are still so many great designs in there, that all we have to worry about is Abrams' taste ;)
If they showed those deleted scenes on the big screen, they were probably at better quality than just 360p YouTube videos, which I assumed for the new material. Well, they still can downconvert it for the e-books...

I was only there one day, but it was pretty good. Unfortunately the "important" panels (Kathleen Kennedy, Carrie Fisher) were pretty much scripted. Other panels (Ben Burtt, Doug Chiang) were open for audience questions (and really informative - especially Burtt showing some of his private Super8 films from the making of the movies, including going through the landfill behind Elstree, where he showed stuff like the trashed Falcon and even stumbling across a wall from The Well of Souls).
The bigger ones just took "Twitter questions", so you can imagine that those only consisted of stuff like "What's your favourite film?" or "What does your typical day look like?"

I doubt it will come up. I've been to two Celebrations and both were filled to the gills with the GEORGE CAN DO NO WRONG crowd. I made it a point to frequently ask people whenever I was waiting in line for something about the OUT and the vast majority didn't even know it was an issue or care. Maybe our European counterparts will be different but I'm not holding my breath.
I'll try to ask about the OOT on Blu-ray at the panel.

It will definitely be letterboxed, because there are no anamorphic Blu-rays.

That's too broad a generalization. Disney has released a LOT of absolutely stunning looking restorations of their animated movies as well, so it could go either way.

It needs to be noted though that the Hobbit WAS planned to be finished at 4K (and it could have been sized down for the needs of digital projection without problems after that), but since 4K requires much longer render times and general fidelity, it was actually time constratins (and probably budget) that forced WETA to finish it at 2K.
Of course, having the movie at 3D and 48fps doesn't really make things any easier projection wise.
I would love to get those :) I would suggest converting them to FLAC though, which offers lossless compression to make sharing easier. And for that, just get a free Dropbox account until enough people have them to make torrents or something.

I would have to answer that officially it’s never gonna happen, but you never know with George. It’s one of the constant things that—let’s put it this way, it changes always. You never know.
It's basically just that the official line ("I would have to answer") at that point was no OT, and that's pretty much what all LFL employees were saying. He also admits that the "official line" doesn't mean sith with Lucas anyway, so the whole quote basically means nothing.
I'm pretty sure those extra clips will look like crappy 360p YouTube vids. So basically it's (possibly great) material going to waste, because of no proper release.
