First off, only including the 2002 version was Universal's decision, not Spielberg's; when he found out, he went over the video department's head to get both versions released in the regular edition.
Second, Beauty and the Beast is not seamlessly branched; there are actually 3 separate versions of the film contained on the DVD. That's why the quality is less than stellar. Seamless branching would not compromise quality, but given that John Williams created new musical cues for the SE, it could prove problematic in terms of continuity. I believe we discussed this before a long time ago, DJR.

Never said I wanted blood; I only said that it was one of the concessions made, as there are scenes in AOTC where the judicious use of blood would have been appropriate (the battle arena, pre-Jedi entry).

Obviously the thrill of seeing the movies in the theatre again must have tempted them. It's not just about whether or not they like the changes to the first movie, jimbo; there's something about seeing movies in a theatre that cannot be duplicated @ home, no matter how good your HT system is.
The other reason people went to see the others in the theatres was curiosity. After seeing what GL had done with ANH, they wanted to see what had been done to ESB and ROTJ. Like or dislike of the SE, I can assure you, had very little to do with it.
