Ah, finally, Red Hot Riding Hood and all her incarnations are presented. Yes, I totally agree. Even though the wolf blew his brains out at the end, I'd still want to be in his oversized shoes.

Of course all those things are true, but that's under the assumption that Luke is thinking rationally rather than out of anger. Anger at all the things the Emperor is saying. Angry that his friends are in a trap, and that his fleet is going to be destroyed, and it was the Emperor who set it all up. Meanwhile, Vader's been standing there, practically silent, blending in with the background. Luke's definitely going for the Emperor, and the Emperor knows that Vader will block the shot, thereby finally getting Luke fighting.

How can you think he's trying to hit Vader? As Vader's blade clearly shows, Vader himself is not within reach of Luke's strike. Two, it's the Emperor, not Vader, who got Luke pissed off. Three, it's totally out of character since Luke had been spending the whole encounter trying to redeem his father. Why, then, would he immediately go for the kill for no apparent reason? He's obviously going for the Emperor.

DVD versions VS SW Special Edition Laserdisc 1997

Anything released from 1997 onward are regarded as the "Special Editions," which means they have been significantly altered from the theatrical presentations. If they were released in 1997, they should be clearly labeled as such. If they were released in 2000 or beyond, they no longer have this distinction, but they still are. And, as you pointed out, the 2004 DVDs have alterations that include the 1997 alterations but also additional ones.
