Although the 97 version is probably the easiest film version for them to scan, it just makes no sense that they would re-release the 97 version as is. It's a weird, mostly-forgotten version. It only makes sense as part of a larger, Blade Runner style release.
I hope Hairy Hen stops by. He put together a few great examples of why the DVD mix is so bad. But I don't recall anything like that for the Blu-ray mix.

My 11-year-old son recently went on an overnight trip on a charter bus with the Boy Scouts. They watched the Special Edition trilogy on the bus's video screens. Nobody knew what he was talking about, not even the adult (supposedly a huge fan) that brought the movies.
On the other hand, I have raised my son well :)

Difficult to say, but it does look like they are building interiors to the ship. So that's a very good sign.

Also: in the Empire of Dreams documentary, there's the original bluescreen footage of the explosion used for the scene. You might be able to do something with that.
Harmy, the sabers definitely look better. But in some shots in the freezing chamber, the sabers - especially Vader's - don't seem as bright and white as they do in the GOUT.

I was thinking that releasing the OOT on Blu-ray in May 2015 would be a great way to build up hype for the new movie. But I didn't want to get my hopes up.
To be honest, it would be the perfect act of goodwill on Disney's part. But probably more importantly, it's a genius marketing move.
I think in one of the deleted scenes about the building of the Rebellion, Palpatine implies something to Anakin about Padme's relationship with Obi-Wan.
The blaster bit at the end had me doing a double take. Hilarious!
The majority of the changes seem to be color related, and some of the 2.0 color changes contradict the GOUT. What's your source for these changes?

This is looking like much more of a "kids show" than TCW was. The imperial stuff they showed at the beginning of the project was promising, but the rebels are not impressive.
I'd be surprised if they end up showing the VHS version. Can they seriously think it'll look decent on an Omnimax screen?
Look for the revised version of Deleted Magic. I think that has the most complete version of the Jabba scene.

I'm not overly impressed, but it's really early to jump to conclusions. The aesthetic of this show is very cool though.
Any show takes a while to find itself. The Clone Wars was pretty hokey in the beginning, but it got much better after a few years. The "Lost Missions" on Netflix will probably be excellent.
I just had a weird thought (a tad off topic) while thinking about the parallels between Episode I and SW (Ep IV).
Amidala is the MacGuffin of Episode I. She is the Death Star plans.
