Kirk was established as a Beastie Boys fan in the 2009 film. It’s nice change from everybody being into Shakespeare and classical music all the time in Trek.

Emmet Otter's Jugband Christmas (Complete) - (Released)

It was adapted into a live stage show in 2008, and Paul Williams wrote some new songs for that. Maybe that’s where it’s from?

JEDIT : Wikipedia says it was written for the tv special but was never used.

IIRC, Harrison wasn’t under contract for a sequel at the point in time Splinter of The Mind’s Eye was being considered as the economical “plan b” approach for the next film.
