He went with 720p because a) his PC isn't powerful enough to edit 1080p footage properly and b) so that the gap in quality between the Blu-ray material and any SD material used isn't as jarring.

The German track from Harmy's ROTJ Despecialization 1.0 is at the wrong pitch though.

Given that 3PO wasn't willing to get into the escape pod of the Tantive IV, without R2 the Empire would've just gotten the plans after searching the ship.

I really don't think it's necessary for the video file to get larger that it's now. The gain in quality would be negligible.
I would be absolutely happy with Brad Bird directing... "Ratatouille" being my favorite Pixar-movie next to "Toy Story 3", written by Michael Arndt. So I guess the pairing of the two could be "incredible" (pun intended).
Apart from writers/directors I wouldn't really mind seeing Johnston act in a more behind the scenes capacity, at ILM. Although Doug Chiang did some great concepts for Episode I, that DID in fact call back to Ralph McQuarrie, how about having Johnston as art director? I don't know if he is still interested in stuff like that, but it might just as well result in some OT-styled designs for the sequels.
I think Peter Jackson and WETA found a great middle-way with their films (especially LOTR), combining sets, green-screen, CGI and a lot of miniatures.

Fox wouldn't pass on the revenue... I think the OOT not being released was purely a Lucas thing.
Well, I'm ready to go and waiting for Harmy's 2.1 version. Since that happens around Christmas, I guess it won't be done before 2013 though.
I wouldn't mind a performance capture film that raises the bar in terms of realistic looks. That way even younger Ford/Hamill/Fisher/Williams would work... Billy Dee that is, not John :D
They can release the OOT under the "Disney Treasures" brand ;)

Key out the darker parts and fill those with the GOUT. That way you keep the detailed lit parts. Of course you would have to mask out the star background (as they probably won't line up) by hand.
