The new version of bh001: Clapperboard - The Empire Strikes Back should be torrented this week thanks to Metallaxis. There's some good Hoth trench footage on there.

There are small chunks of ESB BTS footage in the Episode 2 Web docs on starwars.com. I can't remember if the other web docs have Empire footage or not. Worth a look through.

And of course, there is always this odd clip of rebels running up the ramp of the Falcon at Hoth.

Thanks guys. I am sure I have that odd clip of Rebels running up the Falcon ramp somewhere on VHS. It was about 8 years ago on 'London Tonight' (local news programme) from a piece about Elstree Studios. I must dig it out.

That's Episode 2 web docs 3,7,8,9,10 And the Soundtrack! documentary has a very small bit of production sound i a Dagobah scene.

If you're patient, babyhum will have the best version of that soon - a revised edition of his earlier release, this time taken from a TiVo stream with bonus interview footage extras.

Not sure how relavent this is to your search, but last week on UK TV they had a show under the Favouritisim series called "Al Murry's Showbiz Fights" and at number 4 was the duel between Luke & Vader in ESB, they had Mark Hamill's stunt double in to point out scenes where he was playing Luke such as going backwards through the big round window.
Luckily I managed to download it last night and it was encoded at high quality (718 pixels wide).

Not true.

he's using my master. It was recorded directly onto my DVD recorder. No tivo.
