I want to sit down with my wife and do a marathon viewing of the original trilogy. What I’m looking for could best be refrred to as a “expanded edition” keeps things like the violence in the ice cave on Hoth but doesn’t shy away from including the extra effects shots from the newer editions. Does such a thing exist? Where could I find it? Thanks for you time and all the hard work that goes on at this site.

I don't think what you are after exists yet but in terms of edits that use the best of the SE changes I'd go for Adywan's ANH:R or Darth Editous' Partially De-Specialed.
ESB:R probably wont be out by May and as for ROTJ edits there isn't much choice but Spence's is certainly worth a watch for an alternate view.
For an edit with more deleted material there really isn't any other option than the War Of The Stars duology even if the second half makes the whole set shorter.
They look very different though (read the threads for a general feel of what makes them different from the Star Wars you know.
