You will lose quality regardless, but with HD footage you have room to crop it without a noticeable decrease if you're planning on an SD release. This is all due to the simple fact that there's more picture information in the HD footage.

V2.5 is out just for Star Wars. Empire is out at V2.0, and ROTJ is out at V1.0, but a V2.0 release is planned.
