 I suppose they will. I just kind of assumed when they bought Lucasfilm that they wouldn't want to keep releasing the SE without the OUT. Probably just getting my hopes too high, but I figured they'd want to get the original films out there so fans would stop being angry with the OT's lack of availability. 

 Releasing the OUT is still a possibility. This thread is speculation, not fact.

A link to an article discussing RMW's projects and tools. From the article:

"After RMW bought Lowry Digital, the company has completely restored over 50 commercially released classic films and DVDs over the past decade, including Casablanca, Citizen Kane, Singing in the Rain, the James Bond library, the Star Wars trilogy and numerous Disney films."

More evidence to consider.

 Well, they did restore the Star Wars trilogy for dvd and blu ray

 Well, the DVDs and Blu rays don't look terrible As far as clarity. The main issue is really the coloring.

As for what to look for, I'll be specifically noting the fanfare, the beginning of the crawl, Jabba if he's even there, Luke's saber on the Falcon, the corridor of the detention block, and the language of the tractor beam settings. Other than that, the Mos Eisley and BoY CGI shots will be a dead giveaway. There's also that new rock in front of R2 if it's somehow kin to the BD. Coincidentally, I downloaded and watched Harmy's Respecialized earlier today, so I think I'm good. Anything else I should look for?

Praxis shockwave?
Time

Since the release of the Star Wars Special Editions, Praxis shocwaves were added to the Death Star explosions and the destruction of Alderaan. But has anyone ever noticed that when Anakin Skywalker destroys the trade federation ship at the end of The Phantom Menace,it is missing the shockwave? Just something I noticed..
