Personally, I’m fine with the purple saber(s). But only with Windu and potentially Dooku (as I’ll be doing in my ep 2 edit).
I think color has incredible meaning in Star Wars, which is why the three lightsabers you see in the OT were all different colors. Each represented a significant difference in character from the others’ owners, and the colors mean different things for different characters.
Watching the PT, it is pretty clear from Episode I that Windu is the more aggressive member of the Jedi council. Qui Gon is a peaceful hippy of sorts. Obi Wan is the learner, like Luke was in ANH. Then of course, Maul being a Sith, would have red. The purple never bothered me, as it was distinctive of an aggressive Jedi. Perhaps one who uses anger, who maybe was once tempted by the dark side (simply having the color purple leaves many questions, which I like).
What bothers me is having lightsabers everywhere in the PT. They should have been used sparingly, with Yoda and Sidious never touching one (this makes zero sense to anyone who watched the OT first).
Anyway, sorry for veering a bit off topic. This just gets me fired up.
In short, I’m more than curious to see a version of the PT with simply blue/red lightsabers (could be fantastic), but I don’t think it’s entirely necessary. In my opinion, the OT encouraged the idea of multi-colored sabers beyond red and blue.
