How Easy Would This Be?

So recently I've decided to buy the Gundam Movie Trilogy DVD boxed set, but there's one object of casternation: I read on Amazon.com that the movies have been (shock) changed for the DVD releases. This being an anime series, I looked at the Japanese releases, but no: they have the same edits.

HOWEVER, all the complaints I've heard indicate that the only thing changed was the audio (some sound effects altered to sound more "realistic," songs removed, etc.) It seems to me, then, that to do a "fixed" version all one would need to do is simply rip the audio track from the VHS tapes (which you can get off Ebay for ten bucks) then rip the footage and subtitle tracks from the official DVDs, and then marry them together and burn them onto another DVD. Potential extras could include the English dubbed versions (the current DVDs are Japanese with an option for English subtitles, but dubbed versions of the movies WERE released on VHS back in the day).

So, besides copies of the movies and a DVD burner, what all software and hardware would I need to accomplish this? Is it really as easy as it sounds?

And just to avoid making a fool of myself, is there anyone who has already done a project like this?

You'll probably find that it's not as simple as it sounds - although it's not especially difficult, the process of syncing the audio can be time consuming.

After reading that, I think it may be easier to just dub my VHS copies onto DVD-Rs, which I already have the tools and experience to do.

Sad too, because I remembered another movie that I think needs a fix: Bakshi's LOTR, in which the ending narration was changed. The new narration sounds just totally misdelivered and wrong, whereas the original "so ends the first part of the War of the Ring" was spot-on.
