Making a DVD but what bitrate to use?

In the UK we had a great program called Garth Marenghi's Dark Place, which was basically a spoof horror show/documentary. Really good fun! But they havent released this on DVD yet!
So im gonna make my own!
Im using Adobe Encore DVD and the first thing was to put each episode into the project, but even at this first stage I have encountered complications. I need the resolution to be much higher than it is at the moment. No probs I thought... I'l use TMPGENc to re-output it at a higher resolution and then I can put it on the project.
This is where the problems come in....

This is the first proper DVD Iv ever attempted. I aborted my plans to do a Smallville DVD when I realised that I could only fit 1 OR 2 episodes on a DVD. But after deciding to do this one, Iv ran into the same problem.

In the past Iv used TMPGenc to output footage in order for me to do my own trailers and iv never bothered leaving the bitrates for video and audio, anything lower than maximum really.

So heres my question... what bitrate should I use? I have six episodes. Do I basically, divide the total amount of disc space with how many episodes I have and do it that way? Or is it very much trial and error?

DAYV - I believe you're thinking of framerate, not bitrate.

I'd advice you to put up to 120 minutes per DVD-R and use the AVAMAT6 matrix. That way you would be able to use an average video bitrate of ~4700kbps and an audio bitrate of 384kbps (AC3 if you can, MP2 encoded via toolame as an alternative). It should look okay. Also, I'd recommend you to use CCE SP instead, in my opinion it's easier to use than TMPG and many people say its MPEG2 encoding is superior. Be sure to properly filter your video as well.
