According to Captain Needa the Falcon is too small to carry a cloaking device. Since Slave 1 is much smaller than the Falcon it wouldn't make sense if it were able to cloak somehow.
Besides, I don't think one would need to be able to "disappear" to hide from such a ship as the Falcon. A cruiser can have equipment allowing it to detect any ship nearby, but a freighter wouldn't necessarily have that. So as long as Fett keeps his distance (which he does), doesn't lock-on some missiles on the Falcon or pings his IP address I'm not shocked that Han is oblivious to his previous.
