Kaal-Jhyy put together a fantastic DVD titled "Star Wars: Jedi Knight - Dark Forces II - The Cut Scenes" way back in 2005. The original thread for it is HERE. It doesn't have gameplay footage, but it does have all the cut scenes and a ton of special features.
