The thing is:
The audio is given in 5.1 or better. The dialogue is on the center channel. So you can just take the center channel and get rid a lot of the music, but sound effects as well. Unfortunately, the center channel isn't free from music and sound effects. So there still remains a lot of the unwanted stuff. But it's lot better than taking the full 5.1 or so.
Sounds interesting, of course.
But if it would be possible to replace the music in a clean way, it would have been done already. The music is a key point concerning the differences between PT and OT.

I just want to say that I like your idea because it's a new approach to edit this movie. It's something no one has ever done before or maybe even thought of.
Maybe it's a little bit like episode IV where we start with the droids and experience the events from their view. That was inspired by the movie "The Hidden Fortress".
Or just release the edit now.

The guy should redo the prequels that way.
By using dialogue from ROTJ you can make Vader say: "I am your ... sister." in ESB.
I guess some of Tchaikovsky's symphonies are suitable, because they are very powerful and induce a feeling of darkness.
So the tracks will be for the DVDs? I am asking this because the Bluray cut of AOTC is different from the DVD cut.

Maybe Qui-Gon's voice could remain after his death by using some voice clips...
He could give Anakin and/or Obi-Wan guidance in the end of the film like Obi-Wan's voice did with Luke in ANH at the death star battle.
