I did something like this, since I had both the BD and HD DVD. A -431ms delay is what you need to add to sync the DTS-HD MA to the VC-1 stream. I hope this helps.
You could probably piece together a good portion of the IMAX scenes in 1.78 from the clips that are shown in the special features(which are surprisingly long). They have a nice bitrate, too. It would require some editing though, since the center of the frame is sometimes obscured by text. Overlaying the 2.35 Blu-ray image over it should be enough to cover it up. Anything not shown in there could be patched up with the iTunes and HDTV sources. Just an idea.
Hunger Games: Catching Fire has been 100% confirmed to have the switching aspect ratio on Blu-ray.

I certainly hope they do branching because this just sounds extremely worrisome to me. I've never managed to complete my TOS DVD collection because the only ones that are available are those stupid CG versions.
They're only recompositing the effects because they were originally post-produced in SD. So, having them on Blu-ray would be pointless unless they recreated everything from scratch. Which they are doing. And TOS is available on Blu-ray with the ability to branch between both CG and old versions.

Well, with all the changes he's done to the audio and video(including color timing) it'd be impossible to do seamless branching. So it'd either be two discs(disc 1- Special Edition, Disc 2- Theatrical, Etc.) or two really badly compressed cuts.

Yep. I've been lurking here for a while now(hearing about Star Wars: Revisited led me to the site) and it's quite an interesting community, if I may say so. And the stupidity on the Star Wars thread at Blu-ray.com is just ridiculous. I've felt compelled to strangle that starwarsagent guy sometimes. :p
