As far as we knew from the film alone, the Empire never really bothered them (in fact, one could go so far as to say they coexisted peacefully because I assume the Empire knew about them and deemed them not a threat), possibly even had good relations with them.
They should have thrown in some forest-clearing scenes or something where AT-AT's step on Ewok orphanages or stormtroopers dump toxic waste into Ewok wells or something so we could actually feel like they were being wronged in some way.

I just remembered that I once planned to write a story back in the 6th grade that would have had the Simpsons taking a voyage on the second Titanic, only for Godzilla to show up and start laying eggs and wrecking havok on the ship. Beyond a chapter or two and a few drawings I never got anywhere with it.
