As the OT was named the DEFINITIVE, more fair will be digitally remove Ewan McGregor and replace him with young Alec Guinness. Though it is impossible theatrically now, it may be done via CGI.

It is 'it'. And their world also looks real. It is other world for me. It looks so sure, that I feel this world perhaps really exists somewhere.. far.. far away. This world is based on sci-fi plus a few fantasy. But fantasy elements are not in conflict with my vision of our real world. For example, I don't know if the Force is real or not. Perhaps the Force is real, but nobody in our real world know about it yet.

And here is why I don't like SE. SE breaks 'it'. Some SE changes are so unreal, that returns me to our real world from feeling Star Wars world, because remembers me that Star Wars in not a real story but is just a show for amusement. I can say the same about some other movies that I like a few, but can't feel them as a real worlds because of too unreal elements.

CorellianSmuggler, where did you got this images? VHS, LD, DVD, 70mm or 35mm film? The differences may be due to the types of media. And I wonder what means 1980??? As far as I found in Internet and on eBay, the first VHS and LD releases of A New Hope has been printed in 1982. The Empire strikes back obviously at the same year or later.

I am agree with Scruffy. If the very first 70mm or 35mm film originals yet exist, it's transfer to DVD without any remastering will be fine. Though it's quality will be a few less than in 2004 DVD release due to noise (sound noise and image noise). I'll prefer this, without THX and other remasterings. I am afraid that at remastering they may do also other changes: voices and some image elements or even again do a few special edition changes.
