This comes from writers who think the villains are more interesting than the heroes. Just because they have cooler suits doesn't mean the story is really about them.

Well the Old Republic game does allow you to step into the shoes of a Sith or a Jedi so in that case neither side are really the heroes or villians
Without clear heroes and villains it is not really star wars.
