For me, it all depends on my mood. Sometimes I want to go for full nostalgia, like when I was a kid and watched it on VHS, so I’ll watch the GOUT. Other times, I want the best visual quality for the theatrical cuts so I’ll watch 4K77, 4K80, and 4K83. And other times I’ll want that Blade Runner Final Cut approach and watch the first half of Star Wars in theatrical 4k77 and then switch to the 2019 4K disks for the second hour to skip the awful Jabba Scene but fix the lightsaber FX on the Death Star and see the new FX of the Trench Run, then I watch the entirety of ESB in 2019 4k disc, and for ROTJ watch 4K83 since the SE of this movie is pretty much an abomination for me with Jedi Rocks, Vader’s “Noooooooooo!” and for Hayden replacing Sebastian Shaw.

But with a twist, I have them in playlists in Plex with era-approximate theatrical bumpers, trailers, and for Jedi, the original THX trailer as well.
I like to watch Harmys Despecialized version with the german edits from Laserschwert and the 1995 THX LD audio track.
After that i watch the Special Edition 1997.
I like the Special Edition 1997 because of nostalgia.
Since finding the 4K series, those are the best way to view the films in their original glory (both the original versions and special editions).
