And at the risk of getting flamed by at least one previous poster: I'm glad the EU re-appropriated Boba Fett and made him badass again after his lame inclusion and death in Jedi.
I actually really enjoyed the Boba Fett comics (Death, Lies, And Treachery, not sure if any new stuff has been released since then). I liked following the exploits of Boba Fett as kind of private eye with high tech gadgets (think Batman but in it for the money). I know a lot of fans cringe at that kind of stuff, but I really enjoyed it. I liked seeing smaller corners of the SW universe where everything wasn't high stakes, the Force, magical/scientifically explainable powers, and super weapons with the ability to destroy planets.
I also really liked the Dark Horse Droids comic series. Again, seems silly following the adventures of two dumb Droids. But I liked the low stakes smaller corners of the galaxy feel they had two them. The dangers they were in was always really minor things on the grand scale. It was refreshing to see parts of the SW universe that don't really matter and to read about things like pirates capturing a luxury liner, or an arms dealing forcing his robots to build weapons for him.
