Another thing I hate about the EU is its redundant characters. How many elite circles of Force-users does Palpatine have?

Not that I defend the change... but Han's head motion in 1997 was rather minimal and well within human body limits. In fact, observing the actual shot, Greedo would miss even if Han didn't move the head at all. So your example is quite worthless.

I hate Vitiate. He takes all of Palpatine's accomplishments, ideas, and symbols, and says, "Those were mine thousands of years earlier" and ruins the Republic's transformation into the Empire by making the Republic as we know it be a product of the Sith Empire's influence.

Yes, I hate when Star Wars becomes too sci-fi and has to have a scientific explanation for everything. I used to like that, but then I realized that the scientific explanations are no more realistic than the alternative.

The ANH screenplay explains that Han said "parsecs" because he doesn't know what he's talking about. The EU instead says that Han was less than 12 parsecs away from a black hole.

It does not say he doesn't know what he's talking about.  It says he's trying to impress them with misinformation.  There's a fairly large difference there.

If Han knew what he was talking about, he would have used an accurate measurement, even for a "stupid attempt to impress them with misinformation".

Let's not forget the technology. Ships and weapons and other various pieces of machinery were very crudely shaped, bulky looking, and dingy in TOTJ, yet only a generation or so later in KOTOR, everything's become streamlined and shiny like in the PT.

How Many Han Solo type clone characters are there or multiple versions of copies of the Millennium Falcon?

The EU made them dime a dozen.  

I sort of hate them but i understand why they exist.

Even when they are not specifically the same thing and not a Corellian YVT freighter.

Han Solo first became a template.  Its like Boba being the template for all the later Bounty Hunter character ripoffs.

Because they cheapen a lot of the characters and often feel out-of-place. Palaptine shouldn't be the product of an ancient lineage and the idea of two immortal factions who keep on going through the same motions over and over and yet continuing to believe it won't happen again makes no sense. As for red lightsabers, there's a lack of consistency as to when the Sith started using them. Some places imply that Palpatine started it while others have the Sith using red lightsabers thousands of years earlier.
