Here's the other problem with the music in the prequels: Rather than asking politely asking Williams to compose a new cue when he didn't like it, Lucas instead opted to track music from elsewhere after the scoring session was over. This didn't happen in the OT. With the Hoth battle or the Endor battle, it was just one huge, great cue, and the whole thing was kept.
In contrast, here's the music for Geonosis in Ep. II:

This didn't happen in the OT. With the Hoth battle or the Endor battle, it was just one huge, great cue, and the whole thing was kept in contrast.
I always thought that Empire especially felt it was like one big long score. It just seemed to flow perfectly!

With the emphasis on big and long.
Don't get me wrong, I think Empire has a terrific score ... but there's almost too much of it. Constant music is a sign of poor film scoring. There was some judicious editing done for the movie, because the unedited score released on CD runs nearly the entire running time of the film! The transitional points from unscored section to music are quite important ... and constant music doesn't allow for that. There seems to have been a fair bit of directorial score editing on The Empire Strikes Back.
It seems Lucas was a better score manipulator with the O.T. than he became with the prequels. Maybe copy-paste wasn't a technical feasiblity back then ... or maybe his talent in this area tanked over time just like his other talents.

I believe this is pretty much spot on. Editing rolls and rolls of tape recorded music was clearly a more time consuming and challenging process than dragging and dropping sound samples in a sound editor program today. I couldn't care less about Lucas' statements that it is today's technology that allows him to finally fulfill his vision, because I happen to think that the technology that existed around 1980 was by far the superior technology to fulfil the audience's vison of Lucas' work. And that it what matters to most people.
