Is there any Mac software that can allow me to restore and remaster movies in the same way that most studios clean up the video and sound quality for new releases of their movies? In other words, a way to restore the 2006 non-anamorphic Star Wars movies to be close to the quality of the 2004 DVDs?

Studios don't use a VHS or DVD version of a film as the basis for their restoration.  The reason restorations can look so much better, is because they are working directly off of a pristine film print.  There's only so much improvement that can be done off of a lousy digital master.

No studio does a restoration from a non-anamorphic Laserdisc tape. If they did, there wouldn't be much they could do except make it anamorphic. In fact, if Lucasfilm was working with the same materials we have the end result wouldn't be half as good.

Beyond that, go check out the work being done in the preservation section and you'll find some stuff that looks pretty good.

Definitely.  I recommend looking at G-Force's GOUT Image Stabilization thread if you want to use AviSynth to make your own version of the 2006 DVDs, or Dark_Jedi's GOUT V3 thread if you prefer to just get his upcoming versions that implement G-Force's script along with msycamore's theatrical subtitles and the original theatrical audio tracks.

If you want something that looks closer to the 2004 DVDs in terms of quality, take a look at Adywan's 1980 Theatrical Reconstruction for Empire, and Harmy's Return of the Jedi theatrical reconstruction.  Adywan has also said he'll be doing the same for ANH once he's finished with Empire Revisited.

If you're using Mac then everything becomes much more complicated. Check out LeeThorogood's DVLD Project thread in Preservations. He's the only person with an ongoing Mac project.
