this is not my preferred release of the film but if it were i would want this based on the capture quality - this probably doesnt answer your question

Any suggestions for fixes (color, contrast, etc) before I export it all out?  And what kind of file do most of you export to?

its looks good to me , you could maybe see if one step less contrast makes it nicer (but it might not) its subjective and screen dependent i think

A DVD5 disc always used to be the standard allowing menu's and extra's but standalone *.avi files now seems to be acceptable amongst other formats..

I say to do it in your preferred format and keep doing the same until someone convinces you otherwise. Or let them convert it to their preferred format themselves......
