I’m mainly going to go with things that can’t be easily fan-edited, rather things that’d require rewriting and filming
TPM: Make Anakin’s slave life appear more abusive and miserable, and show he has more trauma from it
AOTC: Include an opening scene with Anakin and Obi-Wan on a mission showing their normal friendlier relationship before it becomes more tenuous (because Anakin’s nervous due to meeting Padme for the first time in 10 years)
ROTS: Include parts from the novelization that emphasize Anakin’s stress and sleep deprivation (due to his nightmares) and Palpatine’s political manipulation of him
ANH: Vader’s in charge from the start and his portrayal is exactly like ESB; every Imperial officer but Tarkin is terrified of him
ESB: No Luke and Leia kiss
ROTJ: Add a scene before Vader defies the Emperor’s orders and goes to his throne room where Vader has a brief fight with the red royal guards; he easily force chokes them and tosses them aside

TFA Han Solo doesn’t die in the movie but takes Rey to see Luke once they get his coordinates.
TLJ Luke, Leia and Han Solo on screen together, preferably on the Falcon. Then Solo gets killed 1/3 into the film, thanks Harrison.

- AOTC: Cut the scene of Anakin confessing to Padmé that he killed the Tusken.
- ROTS: Add the deleted scene where Qui-Gon’s spirit talks to Yoda.
- ANH: Replace the original duel with SC 38 Reimagined.
- TESB: Cut the scene of the kiss between Luke and Leia.
- ROTJ: Replace “Jedi Rocks” with the original despecialized scene.

These are pretty good. I’m just not a fan of SC 38 Reimagined.
I rethought my choice for TFA, and decided that Han’s death should have been saved for some sort of emotional cold open for TLJ.

I agree, Han Solo should have taken Rey to see Luke, then they should have showed up to see Leia and the trio would be back together on screen.
Han could have left alone with the Falcon and had a dog fight in space with his son, emphasizing Solo and the Falcon going out together in a spectacular explosion with a Han Solo last words scene.
