Darth Malak, even though his name could be better. He's the most charismatic villain since Thrawn IMO. But I have to say other than KOTOR an JK games I really don't know much EU sith.

I don't like how he's become something of a "perfect character" thanks to the cult of Revan that's started up since KoTOR, but I've been really attached to him as a character since I played that game.

Nihilus is too powerful for my liking. He does things that should require a superweapon.

I agree that he's too powerful. But I like the concept of him being a wound in the Force. Scale his power back and he'd be a perfect villain to see in a movie or in a show.

I find it funny that they actually gave Nihilus a lightsaber. That'd be like the Silver/Bronze Age Superman using a blaster -- ludicrously redundant and hopelessly unnecessary.
I like Nihilus, to me he is the SW epitome of the ultimate power of the dark side and the what ultimately the dark side would take from you. That constant struggle between the dark side and humanity.
Clearly Malachor V hit him extremely hard, and twisted his connection to the force. Kreia seized upon this, and twisted it further in order to control him through his 'addiction', teaching him ways to feed his hunger. This leads into a downward spiral she couldn't even predict the depths of, culminating in his physical body becoming something almost ethereal, literally on a knife edge between physical being and an almost living force ghost.
Which I think ties in with his extreme powers. It's as if he can see beyond the 'mortal' realm and see into the infinity that is the force like a force ghost could, and thus he can tap into it and control it more than others, albeit at a terrible price to his mind and body. It's a weird power, and juxtaposes brilliantly to the Exiles powers.
^It's still stupid that he uses a lightsaber, though.
He's actually not that strong, he got his ass kicked by a relatively weak swordsman and his only claim to fame is force drain.
Put him in a ring with Exar Kun or Palps and he's dead (for a second time)
I like KOTOR2 a lot but I have always hated the two villain's abilities. What happened here is... if an author is not competent to write a cool character then he tries to make him cool by giving him some ridiculously powerful abilities. The end result is usually something stupid.
Since I like KOTOR2 I compensate this stupidity by just reinterpreting it. For example, in case of Nihilus I interpret his "devouring of worlds" not as force ability but rather just a sort of a fetish, i.e. he force-feeds on the destruction that he is causing with his fleet and army. So in that case it makes the entire thing acceptable and his defeat in 1on1 combat feasible.
