Unfortunately I (my wife, actually) only own a VHS copy.  So is it worth $15 to upgrade to DVD for one throw away joke?  Dunno...it's a pretty good movie, but I don't know how often we'd actually watch it.  It's been years since the last time.

Of course, I could extend the joke by having Jimmy and whatshername have a discussion about Zam.

Dex's dialogue could be replaced with some prime cuts of Homer Simpson.

The waitress droid offering Jawa juice to Obi-Wan could be met with the now free, "you want to go home and rethink your life" (assuming you haven't already got better plans for it).

I already planned on something different for Dex.  My first thought was to play the Seinfeld music over the establishing shot of the diner...which led to the thought of giving George's lines to Dex and Jerry's to Obi.  If anyone can think of a really iconic diner scene between those two that would work, please let me know.  I haven't come up with much yet other than the whale and golf ball story, but I'm sure there's better options.

Maybe use Elaine for the waitress droid?  Or maybe one of the Monk's waitresses?

Not sure if I will keep this or not, as there are many tech issues to overcome...

That's one of my all-time favorite Python bits...but not sure how to translate it to this edit.  I don't think there's enough footage to do it in the scene you suggest, but maybe in a different scene?

You could use reaction shots of Boba inside Slave 1 looking at Obi-Wan. Then Obi-Wan could turn on his lightsaber and engage with Jango, and you could make Boba have a delayed reaction and dub a shot of him saying "look dad" while he's in Slave 1 (so he's never outside). 

Or you could do the super-battle droids walking down the hallway towards Windu, or Yoda walking towards Dooku.
