One of the reasons that I hate that the prequels made Palpatine a Sith is that I liked the idea that the Sith had a code of honor while Palpatine was a truly evil man who did things arbitrarily. Notice how Vader, Obi-Wan, and Luke have fair fights while Sidious blasts defenseless Luke with lightning.

It seems to me that Mandalorians resemble the first draft ("The Star Wars") Sith. Both are warriors who serve the bad guys, but follow a code of honor. Both are also rivals of the Jedi.As I said above, I wish that the Sith code of honor wasn't dropped when making TPM.

If Palpatine was hiding that he's a Sith, why was Vader running around calling himself "Darth"?

I don't think he's hiding anything after his election. Either people were smart enough to understand he was a Sith, or not. Does not matter to him once his have power, IMO. To me the Empire turns quickly into a reign of terror, even if there is still a kind of emperial senat until A New Hope. But in the movies he's never called Palpatine  once he's elected. Just the Emperor. So his real name is not even important.

Side note: I'm not even sure imperial officers and Tarkin in the OT know what a Sith is. To quote Tarking: "The Jedi are extinct. Their fire has gone out of the universe. You, my friend, are all that's left of their religion." You maybe could see the Sith as something only the Jedi knew about, a long time ago. Of course in the clone wars TV series everyone talk about "Sith", so there is a contradiction here.

That the galaxy is stupid or ignorant of its own history is the sort of thing that Lucas would say.
