Tat and the like ('thank you' postcards/notes, website/movie credits, figurines, wallpapers etc.) aside, I always hate meaningul backer-exclusive content. And I never back projects that do that. It feels especially wrong to me in the case of a documentary, because it makes me question whether the creators actually get what documenting is all about.
Make the extra footage available to everyone who wants it at any time. Charge more for the additional content, but don't limit it to the select few who happened to be lucky enough to stumble upon the Kickstarter campaign when it was still running.
Alternatively you could make it backer-only for a limited period after(/if) the documentary comes out. Or something along those lines.
