I'm trying to suss out exactly what I need to have to build a new canon book timeline and I'm wondering if the books by Brooks, Salvatore, and such are included in that or do we literally not have novelizations any more?

The novelizations are still canon.
They've stated that the novelizations are canon in all elements that don't contradict the films themselves ie. Obi-wan and Uncle Owen being brothers.
As for building a timeline, it should be pretty easy seeing as besides the novelizations there is literally nothing else until that Rebels tie-in is released.

What about 'Shadows of the Empire'? Is that book still canon?

Everything that comes out from now on is canon, though, including Heir to the Jedi, Dark Disciple, all the new Marvel comics (Star Wars, Darth Vader, Princess Leia, and Kanan), etc. The only exception to this are further updates/expansions to The Old Republic, which will remain part of Legends (non-canon).
The Darth Plageus novel isn't canon anymore? When it was released I remember the hype being it was one of the few if only novels that were actually canon.

All the SW novels were "canon" prior to the tossing of the EU.
