I read that they released an Aussie VHS of ROTS, so I was wondering, if anybody has one, could they perhaps do some cover scans and send them to me?

No, I've been largely successful with finding cover scans of every ROTS VHS except Australia's. I have heard that there are copies that exist, but the internet has no pictures of any kind.

So you've heard they exist, but can't find any evidence. I wonder if this is just someone misremembering something and setting everyone off on a wild goose chase (see also: "Luke Misses His First Grappling Hook Throw").

I'm still curious as to why you want the scans of this anyway? Couldn't you modify the UK one if you're making one for your own cover?
