Can I go for the gusto and choose actors that weren't even born/adults/still alive when the OT was made, or do I have to limit myself to actors who could have realistically been in the OT?

Oliver Reed would have been fantastic as Han, I can totally imagine him delivering the "Kid, I've flown from one side of this galaxy..." line.

I wasn't joking. All my choices -- Alanis included -- are serious choices.
Kenneth was great in Henry V.
But Henry V is not Obi Wan Kenobi.
He also survived low pay and typecasting, being put in front of a greenscreen. And Lucas horrible handling of his actors.
Just ask Terence Stamp on his opinion over how Lucas directed him in Episode I.
DiCaprio looks like a genius for turning down shit like episodes II and III.
