I would definitely watch that! The OT could probably fit into one movie that way, but I wouldn’t add the TFA scene at the end, I’d just make it Luke’s isolated character arc, would you contain the deleted scenes?
I’d def like to see more of him as a farmboy on Tatooine so the Biggs scene would ROCK.
I’m definitely adding the deleted Toshe Station scene, if I can find a really good quality version of it
