Because gravity’s attractive force pulls everything together. New particles approach from all possible directions randomly. the average shape of this is a sphere. Also, a sphere has the smallest surface for a given volume and surfaces are instable, so reducing the surface leads to a more stable state (for this reason soap bubbles are round, too).
