There was an old issue of Star Wars insider that had a detailed article on the 5 (it think it was 5) forms of lightsaber battle. According to it, obi-wan changed his form after he watched his master (Qui-Gon) die. It was an interesting read, and i dont know if it was endorsed by Lucas, but it did do a good job at covering up the drastic change of lightsaber fighting styles between the OT and the PT

But as far as the Count Dushku (where did you get your name from, I ask cause im a fan of Eliza Dushku (so hot) and wonder if you are as well) said, yes Lucas based the fighting style on the Samurai fighting style, a Japanese Art called Kendo. If you have ever studied Kendo (as i am currently doing) the whole standing face to face thing and very little attacking could result from the fact that they are both so good that they are unable to find openings in each other's stance. Though as ric said, yes, the slow movement and the having your back to your opponenet would have, if against a real samurai, brought about obi-wans 'defeat' much sooner.
