As for Irish language, I'll look into it. It's an interesting idea. We are an English-speaking country but there are many people who place a high importance on the language and work to further it's usage. To my knowledge, this social group does not have a big crossover with Star Wars fans but I'll ask around.
My experience is language geeks are always looking for an excuse ;)
That and from a language preservation/educational point-of-view, you could do a lot worse than Star Wars. That was the rationale behind the Navajo dub, I think.
