I wouldn't feel comfortable filming myself work either.
Also, it wouldn't be how he works in the NLE software (Which is Sony Vegas, not Adobe Premiere) that would interest people. What's defined Revisited has been the visual effects work, so it's his workflow in Adobe After Effects that would be cool to see. Actually cutting and moving footage around is extremely basic and would be boring to watch. Especially with Empire, which isn't being moved around at all.
I'm sure we can expect some VFX breakdowns accompanying the Blu Ray release, where we'd see layer after layer added with accompanying explanatory text, until we have the final shot.
If people do want to see instructional guides, sites like Videocopilot already have that pretty much covered.
