Really? Apart from the Millenium Falcon being called "Rasender Falke" in Star Wars and "Millenium Falke" in Empire and Jedi (which is only a minor change), I never noticed any inconsitencies.

The Emperor is called "Kaiser" in Star Wars and "Imperator" in Empire, Jedi and Sith. Ranks like "General", "Admiral" and "Lieutenant" are pronounced german in the Original, and english in the Prequel Trilogy.
But it isn't the names of characters and things I'm talking about, but the voice actors.

Yoda, Vader and Palpatine have each 3 different voice actors throughout the 6 movies. Palps even 4 if you count the original scene from Empire. 3P0 has 2, and the one who dubbed him in the prequels sounds like Roger Rabbitt.

Also, the German version of Raiders of the Lost Ark was lately redubbed for the blu-ray and from what I heard, people aren't very happy with that. So I doubt that redubbing the whole Star Wars saga would turn out well.

Yes, but the old dubbing is still in existence. The DVD has only the old one and the Blu-ray has both (IIRC).
