I completely understand when the change is as huge as the OT DVD/Bluray. It sounds like other movies such as LOTR had massive color changes as well. The War On Teal is interesting, though. It seems like people have really gotten themselves obsessed over it. It's not something I really even noticed until seeing all these posts/blogs about it. It's true, it's fairly ubiquitous these days. They'll move on to some other overused color scheme someday. As long as old films aren't being given anachronistic color, I don't really care.
It's appropriate that this is in the fan edit section, though. As should Man of Steel or any other reimaginings people may have. "Fixing" old films could be called preservations. But I think people are often pretty loose about what they're matching it to. Certainly in the case of SW/ESB, it's because of the lack of appropriate sources. So, people make it how they think looks good, or how their allegedly photographic memory remembers a theatrical showing 38 years ago, etc. That said, SW on bluray is so fucked that just about any color/contrast/saturation bar you slide around seems to improve it.
