If there are any differences on the audio tracks on each VHS copy, then it might certainly be interesting to include them.

I still have a VHS copy of the Special Longer Version in German and I'd like to offer its audio track if you're interested. It was released around 1997 and was digitally remastered. On the case it says: Hi-Fi Stereo Dolby Surround Mono Compatible.

I don't see 2 US VHS releases have any audio differences.  I was referring to using a median of say 3 like video captures for footage needed to complete a higher res restoration for better detail and such.

Having a German video might help the picture quality from a median of four if done right.

Is the German version fullscreen or wide?

Correct me if I'm wrong, but isn't the actual release using the Director's Edition deleted scenes combined with a down-scaled HDTV airing of the theatrical? I mean that alone is significantly better than anything you could get with VHS or Laserdisc.
