Anakin. From the way he was described in the original trilogy it makes him much more intriguing than Obi-Wan.
I think that an Obi-Wan-centric movies would work but I think the appeal of a prequel to the original films is to find out what Darth Vader was like as a Jedi, the heroic tales of Anakin Skywalker.
