We will definitely be doing scans of the SE in 4k when the time comes. But the eventual end product will be HD 1080p, because that's what the vast majority of people will have and use.
Not enough people can watch 4k on their computers, or have TV's with that yet.
But it will be good to future proof them when the time comes.
The SE versions are very important, as a historical record. And also due to the preference of many fans for these versions. These were their first viewings of the Trilogy in the theater, and also were pivotal in bringing back Star Wars to the public for recognition, and reviving it.

Actually, 4K TVs are dropping in price rapidly and can be had for as little as $350. But I agree that 1080p might be sufficient for now, as the detail in a projection print isn't likely to exceed that.

We should lobby congress to get the OOT restored if the 4K scans are just for the SE only, and Lucas/Disney has a legal stranglehold on the originals. But I'm afraid Lucas deliberately destroyed the negatives 20 years ago as a big "fuck you" to all OT fans.
And 99% of the world doesn't care the real trilogy no longer exists.

Knowing how much of a control freak reputation Lucas has I really doubt Disney would risk him having creative control over any aspect of the OOT.
Fun fact, I think this digital release is the first time the Trilogy has been released on a new medium without new changes
