We will definitely be doing scans of the SE in 4k when the time comes. But the eventual end product will be HD 1080p, because that's what the vast majority of people will have and use.
Not enough people can watch 4k on their computers, or have TV's with that yet.
But it will be good to future proof them when the time comes.
The SE versions are very important, as a historical record. And also due to the preference of many fans for these versions. These were their first viewings of the Trilogy in the theater, and also were pivotal in bringing back Star Wars to the public for recognition, and reviving it.
