I was hoping for something a little less generic than a slightly colour shifted Tatooine or Tatooine (just to make the plot more interesting universe shrinkage be damned).

This is just the first colour pass of the whole film. Even if Ady was going to do something really radical with the colouring/mood of any of these locations (which I'd definitely be in favour of) he still needs to do this initial correction so that he has a properly coloured base to work from. Far easier to get your bearings colour-wise when the Oompa Loompa fleshtones are gone.
